You can log in to your server as another system user, not root, then install it using that user.

Only problem now, that the new (as of now) version v6.4.0 can’t be installed as it says:
ERROR: This script should not be run as root/admin. Exiting.

When using the default command: php upgrade.php

Do you have any idea on how to solve it?

You can check the snipeit.conf file, if the document root points to the correct directory.
